We worked with The Cheese Bar on the transformation of their Camden Market restaurant into Pick & Cheese, the world’s first conveyor belt cheese bar. Founded by Mathew Carver as a street food truck celebrating British cheese, the brand has grown into three London restaurants. This Camden venue, housed in a Grade II listed building, needed a bold redesign to bring their innovative new concept to life.
The Brief
The task was to reimagine the space, shifting it from a traditional restaurant model to a distinctive dining experience centred around a conveyor belt serving artisan cheeses. The design had to celebrate the quirky, fun ethos of the brand while working within the constraints of a historic building and a high-footfall tourist destination.
The Challenge
Delivering this project meant navigating several complexities: installing new toilets and services in a listed building with outdated pipework, working within a busy tourist hub with limited access, and meeting tight budget and programme constraints. In addition, the site was managed by the Camden Market property owners, whose requirements added another layer of coordination. Listed building consent was also required before work could begin.
Our Solution
Meticulous design and planning were key to the success of this project. We retained as many existing features as possible to respect the building’s character and keep costs down, while developing a design that allowed much of the fabrication to be carried out off site. This minimised disruption and enabled rapid on-site installation within the busy market setting. The final design carefully blended historic elements with new interventions, creating a seamless backdrop for the striking conveyor belt concept and delivering a truly one-of-a-kind dining experience.
