Carters @ Westlands

For a change of scenery, certainly not pace, Michelin Starred restaurant Carters uprooted and moved to pastures new for the ‘warmer’ months for an exciting adventure at Westlands. Westlands, a British grower of micro leaves, edible flowers and speciality produce, has been one of the restaurant’s key suppliers for many years. It’s a collaboration that couldn’t be more perfect, with 75% of the produce on the menu being harvested just meters from the table. In fact, the entire menu is entirely inspired by the herbs, flowers and plants surrounding the venue.

The Brief

The restaurant was to be housed within one of Westlands hugely impressive glasshouses. It was an empty space where a bar and restaurant design was required to subtly and uninterruptedly slot into the space surrounded by the beautiful produce. The fit out was to reflect the ‘farm to fork’ ethos of Brad and team and create a unique culinary experience.

Our Solution

2G’s design of the restaurant was entirely guided by its unique surroundings and focus on the overall experience. We installed large timber tables and benches nestled in the middle of the luscious greenery and added additional greenery from the roof to give the feeling of immersion. A large open kitchen and bar, that 2G made bespoke for the project, allows visitors to not only see where their food is from, but also watch in awe as the cooking process unfolds in front of them too. We used re-used timber from pallets to ensure the project reflected the sustainability standards of the restaurant.
